Let’s be honest, our TV is pretty much on Disney Junior the majority of the day, so I was very excited to work with Disney Junior on this blog post. Brooke LOVES watching “Lena” also known as Elena of Avalor. While she really likes a lot of other shows in their lineup, it is hands down her favorite. She loves all of the songs and bright colors, while I love how Elena is positive, encouraging and always seeks to do the right thing. My favorite Disney Junior show is probably Lion Guard because I grew up watching the Lion King and was obsessed with it, however, Elena of Avalor is a close second for me. This summer, since I am officially a SAHM now, I really want to do fun things with Brooke that incorporate her favorite shows. So, this Friday, in celebration of FriYAY and the NEW Elena of Avalor episode, we are making Elena’s Breakfast Empanadas to enjoy during the premiere on the Disney Channel.
Brooke loves helping me cook in the kitchen, eating, and Elena, so I knew it would be a blast. I picked Breakfast Empanadas because the episode will be live at 9:30am on Friday. This also gave us a fun outing to pick up all of our supplies. She was so excited to get all of the goodies.
Ingredients
Refrigerated Pie Crust
Filling of choice
You can use any type of filling you want in your breakfast empanadas. I used an apple filling this time, because Brooke hasn’t been a big fan of eggs, but I would have enjoyed an egg, hash brown and bacon filling. You can use any type of filling your kids might like for breakfast or lunch. These can be filled with chicken, cherry filling, or even beef. Once you decide on your filling, it’s time to get in the kitchen together! Brooke loves helping me cook and Elena’s Empanadas are perfect for her to help cook.
Directions
Preheat your oven to 400 degrees. Take out pie crust and use a wide bowl or circle cookie cutter that is around 3-4 inches wide to cut out your empanada shells. Next, lay out the pie crust circles on a baking sheet and put about 1 tbsp of filling on each circle. Your little one can help you scoop the filling onto each circle. After this, fold over the pie crust to form a half circle and press the edges together. Finally, go back over the edges and press together again. I let Brooke help me put little markings with the fork in the empanadas and she loved it. Bake for 15 minutes, then turn on Elena of Avalor and ENJOY!

During the morning block (6-10am), Disney Junior shows air on Disney Channel and typically, new episodes will air first on the Disney Channel.
