Vermont White Cheddar Mac & Cheese

As I mentioned Friday, Safeway stores are offering FREE Fresh Express Salad Blends with your loyalty card when you purchase $10 on any participating Marie Callender’s Bakes, Bertolli Meals for 2, or PF Changs Meals for 2. I had never tried Marie Callender’s Bakes before, so I made a trip to the store to see what sounded good.
They ended up having six different choices: Chicken, Spinach & Mushroom Lasagna, Creamy Chicken Alfredo with Sun-Dried Tomatoes, Scalloped Potatoes and Ham, Southwestern Style Chipotle Chicken, Three Meat and Four Cheese Lasagna and Vermont White Cheddar Mac & Cheese. I think I stood there for 5 minutes trying to decided between the Scalloped Potatoes and Ham and the Vermont White Cheddar Mac & Cheese.
I ended up picking the Mac and Cheese, obviously. When I got home, it was easy decision to bake it instead of microwave. Both only had 3 steps to complete and I had plenty of time for it to sit in the oven. I cut slits in the top, placed the container on a cookie sheet and put it in the oven at 375 degrees for 55 minutes. The timing was perfect.
Out came this huge portion of perfection. I quickly scooped out a bowl full and sat down to eat. The noodles were soft, cooked just right, and tasted amazing. Next time, if I am going to eat it as a meal, I think I will add some meat and maybe broccoli to it, but it was really good. I also really want to try the Scalloped Potatoes and Ham, as well.
