Avocado Ranch Dip Recipe

Continuing with the theme from yesterday, I have another great game day food idea to share with you! I know, I know, tons of food talk on the blog lately – What can I say? I’m pregnant and constantly thinking about food lately. I figured a fun taco bar would be perfect one night this week. I want it to be complete with normal taco fixings and include taquitos with a “dipping” station. I figured queso, queso blanco, salsa, and avocado ranch. I love mixing avacado and queso but my avocado ranch recipe is my favorite for dipping taquitos.

What you need:

1 avocado, peeled and pitted
3/8 cup mayonnaise
3/8 cup sour cream
3 tbs buttermilk
1/2 tbs olive oil
1/2 tbs lemon juice
1/2 green onion, chopped
1/4 tsp salt

Instructions:

1. Combine all ingredients and blend in blender until consistency is how you like it.

I am hoping that this taco bar will be a huge hit! I know everyone has loved the dips in the past, so I am assuming it will all be completely gone by the end of the night. At our last party, all four dips in the dipping station were completely gone before the game was even over so this time, I am expanding the taco bar to be a tad bigger. I figure if there are left overs, people can always take some home with them!
