Mondays seem to be coming extremely quick lately. I could blame it on our busy schedule or the lack of sleep we have been getting lately, but really I am just not a Monday person. But who is? I spent yesterday afternoon doing the weekly lunch meal prep. If it’s not quick and easy, its not happening in my life right now. I feel like we have been busier than ever in 2016 so far and with a little 10 month old, meals have to be quick and easy in our household. Not to mention, our household is full of picky eaters, so it has to be picky-eater friendly. In order to stay sane, I make sure to schedule out all of our lunches and dinners on Sunday so that I don’t have to give it a thought during the week. Planning lunch for the week is key, because if I don’t, I will eat horrible, or not at all. This week, lunch consists of a fun, quick and easy pasta salad recipe.

Ingredients

Tyson® Grilled &Ready Chicken

Wish-Bone® Italian Dressing

Pasta of Choice (I like the colored pasta)

Mini Pepperonis

Mozzarella Cheese

I picked up all of my ingredients from Walmart, because it is super simple to grab everything you need. I also picked Tyson® Grilled and Ready Chicken, because you can have the best of both worlds, delicious and healthy protein filled meals that are good for you and your family that are simple and convenient. They are made with 100% All Natural Ingredients and White Meat Chicken, plus the best part, they are fully cooked. Let me translate, that means quick and easy. Step 1: Prepare your pasta of choice by following the directions on the box

Step 2: Prepare the chicken according the package instructions

Step 3: Mix the chicken into the pasta along with the mini pepperonis and cheese

Step 4: Top with dressing and mix in dressing until desired flavor is reached

Now that your recipe is complete, cool in refrigerator and then separate it out into containers for each day of the week.
