Is anyone else super ready for summer to be here? When I think of potato salad, I think of fun family meals outside and barbecues. This Chessy Ranch Potato Salad recipe is the perfect fun twist on traditional potato salad. In our house, we pair it with State Fair® Mini Corn Dogs and/or Tyson® Chicken Nuggets. We love simple meals with protein. I basically have two children, because my husband is so picky when it comes to food, so these types of meal are go-to’s around our house.
I love the combination of cheese and ranch. Ranch is one my favorites, plus when you add bacon to anything, it magically tastes even better. Next time you are looking for a quick, fun side dish, try this Cheesy Ranch Potato Salad Recipe. You can grab all of the ingredients you need at Walmart.
Ingredients
2 Pounds of Potatoes
Ranch Dressing Mix
8 oz of Mayonnaise
8 oz of Sour Cream
1 1/2 cups of cheese
1 1/2 cups of bacon bits
Instructions
- Peel potatoes, rinse and slice into bite-sized pieces
- Boil the potatoes in water for about 12 minutes or until tender, then drain with cool water
- Mix together mayonnaise, sour cream and ranch dressing in a large bowl
- Mix together potatoes and dressing mix
- Add in cheese and bacon bits
- Refrigerate before serving
Brooke already eats more things than Kevin, but she absolutely loves a lot of the same things he does. One of her favorites is Tyson® Chicken Nuggets. Its funny how much they are alike already, especially in eating. It’s so sweet watching Kevin and Brooke have Daddy-Daughter time. One of my favorite things to do is just watch them play together and recently they started watching TV together. While Brooke’s favorite is cartoons about princesses, Kevin loved watching Teenage Mutant Ninja Turtles when he was younger.
